Carnitas Enchilada Casserole with Roja Sauce, Cheddar Cheese and Green Onion, topped with Sour Cream and Cilantro, served with a side of Black Beans. Paired with a bottle of 2017 Honoro Vera, Garnacha, Calatayud, Spain.

Chicken Jambalaya with Andouille Sausage, Sautéed Onions, Peppers, and Cajun Spiced Long-Grain Rice, served with Corn Bread. Paired with a bottle of 2014 Uvaggio 'antichi viti' Grenache, Santa Clara Valley.
